The Keto Diet is all the rage these days, and with good reason. It works! And on top of that, there’s evidence that points to a low-carb lifestyle being healthy and good for you overall.
But in a world filled with donuts, French fries and pancakes, it’s not always easy. But have no fear, I’m here to help!
This week I will be sharing 5 of my favorite keto-friendly recipes, starting with something sweet:
Keto Cheesecake
I just made one of these for my wife’s Birthday and it seriously tastes like the real thing. Gluten-free, low carb and easy to make.
Ingredients:
Almost Flour Keto Cheesecake Crust
- 2 cups almost flour
- 1/3 cup butter (melted)
- 3 tbsp xylitol or monk fruit sugar
- 1 tsp vanilla extract
Keto Cheescake Filing
- 32 oz cream cheese (softened)
- 1 ¼ cup xylitol or monk fruit sugar
- 3 eggs
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Instructions:
- Stir almond flour, melted butter, xylitol and vanilla extract together in a bowl until it makes a dough. Press the dough into a springform pan and bake for 10 minutes. Let cool.
- Beat the softened cream cheese and xylitol until fluffy. Beat in the eggs one at a time. Add the lemon juice and vanilla extract.
- Pour the filling into the pan over the crust.
- Bake in oven at 350 degrees for 45-55 minutes until the center is almost set, but still jiggly.
- Remove your cheesecake from the oven and let it cool.
